Does it sound too good to be true if you can whip up a delicious meal in 5 minutes and it will also make your skin look fabulous?
When the weather gets cold and dry in the winter, it becomes especially important to keep your skin moisturised. Eat your way to fabulous skin by hydrating from the inside out!
Eggs are high in protein, which helps cell regeneration. They also contain sulphur and lutein, which promotes skin hydration and elasticity. Avocados are a great source of vitamins C and E and monounsaturated fats, which help your skin lock in moisture. Spinach and other dark, leafy greens are packed with iron, omega 3 fatty acids, phytochemicals, folate, and vitamins A, C and E, all of which help hydrate skin and keep it healthy. Extra virgin olive oil is chocked full of vitamin E and good fats that will moisturise your skin.
Eggs and olive oil also work to hydrate the skin through topical application, so try an egg mask by whipping egg whites until frothy and then applying to the face and neck or simply apply extra virgin olive oil directly to your skin. Rinse with warm water after resting (take a power nap with the beauty mask on!).
½ avocado, sliced
20 g baby spinach (pre-washed packs are handy)
1 tablespoon balsamic glaze
1 tablespoon extra-virgin olive oil
salt and pepper to season
Lay the spinach and avocado on a plate.
Bring water to the boil in a saucepan and then reduce heat to low.
Break eggs into a bowl and gently release them to the simmering water.
Take the eggs out using a slotted spoon when cooked to your liking and add to the plate with the spinach and avocado.
Drizzle balsamic glaze and olive oil over the top.
Season with salt and pepper and serve with a slice of wholegrain toast if desired.
