Chicken, potato and carrot bake with Parmesan cheese and rosemary


Tonight I am using what I have in the fridge, putting together a delicious and easy chicken bake. This dish uses such common ingredients, yet the result is so extraordinary with the exquisite flavour and comfort it delivers. It also helps you to slim down - here is why:

Chicken is a great source of lean and low fat protein. The protein in chicken helps support a healthy body weight and aids weight loss.

Potatoes contain significant amounts of fibre, which helps lower the total amount of cholesterol in the blood, thereby decreasing the risk of heart disease. Fibre keeps you feeling fuller for longer so assists with weight control.

Carrots are low in calories yet contain high levels of essential nutrients for weight loss and optimal body functions such vitamin A and vitamin C.

Serve 4

Ingredients

1 kg chicken thigh fillets with skin on

4 potatoes, washed and cut into pieces

3 carrots, washed and cut into pieces

2 garlic bulbs, unpeeled and separated

3 tablespoons olive oil

3 tablespoons grated Parmesan cheese

3 sprigs rosemary

Method

Preheat oven to 180°C.

Lay chicken, potatoes, carrots and garlic in a baking dish. Sprinkle over the oil, Parmesan cheese and rosemary leaves on top.

Cover the baking dish with foil tightly and bake for 1 hour or until cooked.

Remove the foil cover and bake for further 10 minutes or until the top is golden brown.

Rest the dish for 10 minutes in the oven after turning it off.

Garnish with fresh rosemary leaves to serve.
